A tasty treat for cyclists from an award-winning cafe

I want to Ride my Bike – Café bar and Workshop in Wales is one of Cycling UK’s Cyclist Café of the Year award winners for 2018 and they’ve shared a special recipe with us. It’s a popular choice with cyclists and easy to make.  



If you’re looking for something that lasts, full of energy and good to eat on the go we highly recommend this treat. This recipe is a quick to make and lasts for a week!  



Ingredients

125g Butter

170g Soft light brown sugar

75g Golden syrup

75ml Apple juice

200g Sugar free muesli

200g Granola

200g Any combination of dried fruit/nuts/seeds

Method

  1. Heat oven to 180°C or 350°F or Gas mark 4
  2. Line a baking tray 30 x 20 cm with baking parchment 
  3. Put sugar, syrup, butter, apple juice in pan and gently bring to boil
  4. Remove from heat and stir in all other ingredients, mix well and transfer to prepared tin, press mixture with a fork until well packed.
  5. Bake in preheated oven for 20 minutes, leave to cool. 
  6. When still slightly warm score into slices of desired size. 



When completely cool cut into pre-scored slices and store in an airtight container. It will keep for one week. Serve with a cup of piping hot tea or wrap up and pop it in your pocket for a snack on your bike.
